RECIPE: no-bake peanut butter power bites
Recently I’ve been making a few small changes to my diet. I eat healthy most of the time (writing this while I just had pizza & beer last night …), but I feel like there is always room to improve. For the past few weeks I’ve tried to eat as little refined white sugar as possible. Refined white sugar will encourage sugar cravings, so instead I try to eat dried fruits and snack on berries or my no-bake peanut butter power bites. These are so easy to make and a perfect afternoon pick-up with a skinny latte at the office. I usually make a batch of 20-25 power balls on the weekend and then I have plenty for the entire week. They come in at about 60 kcal a piece, so 2-3 are a yummy snack that’ll also provide a ton of energy and make you full (thanks to the flaxseeds and oats).
What you’ll need:
– 125 gr. organic peanut butter (no sugar added)
– 90 gr. rolled dry oats
– 100 gr. honey
– 30 gr. flaxseeds, shredded
– 1/2 tsp vanilla extract
– 1 tsp ground cinnamon (optional)
– shredded coconut flakes
*makes 20-25 power bites, depending on how big you make them
Mix all the ingredients in a bowl until a sticky mixture forms. The cinnamon is optional, as it adds a “Christmas-y” taste to it – some of you may not like that during Summer. Place in fridge for at least 30 minutes so the “dough” hardens a bit. Then, form the power bites (about 2cm diameter) with your hands and roll in shredded coconut. Store in a tight sealed container in fridge.
Please note: Even though these bites are “healthy” and don’t include refined white sugar, they do still include quite a bit of natural sugar due to the honey and vanilla extract. You want to limit your intake of these natural sugars exactly the way you would limit your intake of refined white sugar, so consuming 10 of these will not only equal a meal in terms of calories, but also almost your entire sugar intake for a day.

They look delicious! And I love cinnamon, so the more the better! I love to eat fat free yogurt with blueberries. or just a handfull of walnuts. Not very original, but still very nice!

Einfach, schnell und sieht auch lecker aus! Werde ich demnächst probieren – nur eine Frage hätte ich: wo kaufst du in Wien Erdnussbutter OHNE Zucker? Hätte ich noch nie gesehen (leider!).
Kauf doch Erdnussmus von DM oder aus dem Reformhaus 😉 Ich habe von Rapunzel zB ein crunchy Erdnussmus, da ist nur etwas Salz drinnen. LG Julia

ja genau, wie Julia erwähnt hat gibt es Erdnussmus, das hab ich sogar schon beim DM gesehen. Ansonsten kann ich dir das Veganz im 4. empfehlen 🙂

Die sehen wirklich lecker aus…leider muss ich bei der Erdnussbutter passen, ist leider gar nicht mein Fall 🙁 Ich mache diese Bällchen allerdings gerne als Brownie Bites…das Rezept gibt es u.a. auf meinem Blog. Die sind sooo schokoladig und einfach himmlisch lecker :)) LG Jenny

Mein liebster Snack zwischendurch ist Erdnuss-Bananenmilch, also einfach Milch, 1 Banane und 1-2 TL Erdnussmus vermixen – fertig!

Hey Vicky, I know I am late to the party but I’m thinking about trying out this recipe in the next couple of day. Going through the ingredients I realized that I have no idea whether to use vanilla extract from a vanilla bean or the liquid one that Americans frequently use for baking? If it’s the second one, where do you buy that in Vienna?
